Recipes for energy bars and balls are everywhere on the internet or you can buy some on the supermarket. But if you received too many dried dates and raisins as gift you should try to make those wholesome, healthy snacks. The no-bake batter can be shaped to bars or rolled to balls. As protein is a slow release energy source its content can be increased using sources such as nuts, hemp seeds, chia seeds, and protein powder.

INGREDIENTS

1 cup pitted dates
1 cup raisins
1/2 cup almonds
1/2 cup whole grain oat flakes
2 Tbsp unsweetened cocoa powder
1 Tbsp almond butter
1 pinch of salt

PREPARATION

  1. Soak the dates and the raisins for 30 min in water and drain thereafter.
  2. Place the almonds in the food processor and pulse until they are nicely crushed.
  3. Add the dates and raisins, and pulse until it's fully mixed.
  4. Add the almond butter and cacao powder. Mix everything in the food processor.
  5. Spread the batter on a baking sheet and shape to a rectangle with equal thickness.
  6. Place the batter into a fridge for around 1 h, then remove and cut into bars. Store in an airtight container in the fridge.
Optional: Replace raisins with cranberries or apricots. Replace almonds and almond butter with roasted peanuts and peanut butter. Or replace the nut butter with coconut oil. Add chia seeds, cinnamon or cardamom powder.
