Chia pudding

Chia seeds are often referred to as a functional food. They are a good source of omega-3 fatty acids, fibre, antioxidants, iron and calcium. The seeds from the plant Salvia hispanica L. were a major food crop in Mexico and Guatemala. Cultivated as a food source it was offered to Aztec gods in religious ceremonies. Aside from being eaten whole, the seeds were used in medicine, ground to flour or mixed into drinks. Chia seeds have no strong flavor. Therefore the seeds can be combined with a wide range of foods. As they form a sort of gel when mixed with liquid, the seeds can replace eggs, be used as thickener in jams or puddings. Creamy, thick Chia pudding is easy to make and very delicious. My favourite recipes are listed below.

INGREDIENTS

Lingonberry-Almond pudding

1 cup almond milk
3 Tbsp chia seeds
1 Tbsp maple syrup
3 Tbsp lingonberry jam as topping

Apple-Cinnamon pudding

1 cup soy milk
3 Tbsp chia seeds
1 tsp cinnamon
1 Tbsp maple syrup
3 Tbsp apple sauce as topping

Choco-Hazelnut pudding

1 cup hazelnut milk
3 Tbsp chia seeds
1 Tbsp unsweetened cacao
1 Tbsp maple syrup

Poppy-Lime pudding

1 cup soy milk
3 Tbsp chia seeds
1 Tbsp lime juice
1 Tbsp poppy seeds
1 Tbsp maple syrup
Zest of 1 lime as topping

PREPARATION

  1. Add the chia seeds and the other ingredients except for the plant based milk to a bowl and whisk to combine.
  2. Add the milk and whisk until the mix is smooth. Cover the bowl and refrigerate overnight, or for at least 30 min until the mix has a pudding-like consistency.
  3. Serve chilled with the desired topping.
