INGREDIENTS
Dough
2 cups (plant) milk, e.g. almond milk
2 tsp apple cider vinegar
1 1/3 cups apple sauce
1/2 cup coffee or (plant) milk
1/2 cup vegetable oil, e.g. sunflower seed or canola
1 cup sugar
1 1/2 cups flour
1 cup cocoa powder (unsweetened)
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
Frosting
250 g (plant-based) butter, softened
200 g dark chocolate
about 1 1/4 cup icing sugar
PREPARATION
- Mix the milk and the vinegar in a bowl and let set for a few minutes.
- Add the apple puree, milk and oil and beat until it gets foamy.
- Mix in another bowl the sugar, flour, cocoa powder, baking soda, baking powder and salt. Add the dry ingredients to the bowl with the wet ingredients.
- Preheat the oven. Divide the batter into two parts. Bake each part in a spring-form pan with a diameter of 18 cm for 25-30 min at 180°C or until a tooth pick inserted into the dough comes out clean. Let the cakes cool down.
- Melt the chocolate in a bain-marie or in the microwave. Warm up the butter until soft but not liquid.
- Add the chocolate to the butter and stir until well combined.
- Sift the icing sugar into and beat until the desired consistency is achieved.
- Spread frosting on the top of one cake and place the other on top. Spread the frosting with a spatula over the cake until it is completely covered.
I prepared the cake for A. as birthday cake. Because she loves M&Ms I wanted to add a surprise. Before assembling the two parts I cut a hole in the lower part and filled it with M&Ms.
