Ultimate chocolate cake [HOMEMADE]

Ultimate chocolate cake

A fluffy, moist, intense chocolate cake without eggs that can be easily veganised.

INGREDIENTS

Dough

2 cups (plant) milk, e.g. almond milk
2 tsp apple cider vinegar
1 1/3 cups apple sauce
1/2 cup coffee or (plant) milk
1/2 cup vegetable oil, e.g. sunflower seed or canola
1 cup sugar
1 1/2 cups flour
1 cup cocoa powder (unsweetened)
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt

Frosting

250 g (plant-based) butter, softened
200 g dark chocolate
about 1 1/4 cup icing sugar

PREPARATION
  1. Mix the milk and the vinegar in a bowl and let set for a few minutes.
  2. Add the apple puree, milk and oil and beat until it gets foamy.
  3. Mix in another bowl the sugar, flour, cocoa powder, baking soda, baking powder and salt. Add the dry ingredients to the bowl with the wet ingredients.
  4. Preheat the oven. Divide the batter into two parts. Bake each part in a spring-form pan with a diameter of 18 cm for 25-30 min at 180°C or until a tooth pick inserted into the dough comes out clean. Let the cakes cool down.
  5. Melt the chocolate in a bain-marie or in the microwave. Warm up the butter until soft but not liquid.
  6. Add the chocolate to the butter and stir until well combined.
  7. Sift the icing sugar into and beat until the desired consistency is achieved.
  8. Spread frosting on the top of one cake and place the other on top. Spread the frosting with a spatula over the cake until it is completely covered.

I prepared the cake for A. as birthday cake. Because she loves M&Ms I wanted to add a surprise. Before assembling the two parts I cut a hole in the lower part and filled it with M&Ms.
